Instructions: 1. Cook the potatoes in lightly salted water for about 15 to 20 minutes, or until fork tender. Drain the potatoes and peel them. Cut the potatoes into bite-sized pieces and place in a mixing bowl.
2. While the potatoes are still warm, mix the oil, lemon juice, mustard, scallions, garlic and rosemary and pour the dressing over the potatoes. Sprinkle with salt and pepper to taste. Serve at room temperature. Email this Recipe:
