5 lb small red potato cleaned and halved or quartered
3 ct artichoke hearts (13.5 oz. ea.) drained
1/2 cup olive oil
4 tbl fresh rosemary
salt
Instructions:
Instructions: Preheat oven to 375 degrees F. In a bowl, toss the potatoes, artichokes and rosemary with the olive oil. Season with salt and coarse ground pepper. Place in a shallow roasting pan and roast for approximately 1 hour or until potatoes are soft when pricked with a fork.
