900 gm potatoes
110 gm smoked salmon
1 dsp lemon juice
2 tbl fresh chopped parsley
1/2 tbl olive
Instructions:
Instructions: First of all peel the potatoes and place them in a saucepan with enough water to cover add some salt and boil them for exactly 7 minutes.

After that drain them and place them on a plate until theyre cool enough to handle.

Meanwhile use a sharp knife to cut the smoked salmon into smallish shreds place them in a mixing bowl and toss them in the lemon juice.

When the potatoes are cool grate them using the coarse side of the grater and add them to the smoked salmon along with the parsley.

Mix everything together gently so that the grated potato doesnt break up.

Now heat the oil in a 23cm heavy frying pan (preferably nonstick) and as soon as its hot tip the potato mixture into the pan.

Turn the heat to very low then spread the mixture out evenly using a palette knife or spatula.

Sprinkle the surface with a little salt and a dusting of cayenne then weight the potato down with a plate that fits nicely inside the pan and cook gently for about 20 minutes.

Turn out on to a warmed serving plate and serve cut into wedges.
