Instructions: Combine oats and buttermilk and let soak. Meanwhile heat oven, butter pans, then mix together flour, salt, soda, and baking powder.
To oatmeal mixture, add shortening, brown sugar, egg and vanilla. Pour wet ingredients into dry and stir just enough to moisten. Spoon into muffin cups. Bake at 400 F for 15 to 20 minutes until golden. NOTES : My kids are nuts for these. To me they taste like butterscotch.............. Karen Email this Recipe:
