Instructions: Heat oil in a medium nonstick skillet over medium heat. Add onions and peppers. Season with salt and pepper. Cook until softened and heated through, 1 to 2 minutes. Add tomato, and cook for 1 minute.
Add eggs one at a time to skillet. Continue to cook, stirring constantly, until eggs are cooked, about 3 to 4 minutes. Season with salt and pepper. Serve immediately with tortillas or tortilla chips crumbled over the top. This recipe yields 2 to 3 servings Email this Recipe:
