1 can Cannelini beans
4 x Plum tomatoes
4 x Plum tomatoes, pureed
2 x Cloves garlic, chopped
1 x Red onion, chopped
100 ml White wine
20 x Shelled mussels
Chopped basil
Chopped coriander
1 oz Diced focaccia bread
Olive oil
Instructions:
Instructions: Sweat the onion and garlic in the oil. Add the wine, beans, all the tomatoes and the mussels. Bring to the boil then simmer for about 3 minutes. Add the basil, coriander and focaccia and season well.

Serve immediately, drizzled with olive oil.
