1/3 cup rutabaga
cooked/mashed/sieved
1 cup light brown sugar
2 tbl unsulphured molasses
2 x eggs lightly beaten (or 1/2 cup egg substitute)
1/4 cup light cream
1/2 tsp giner
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ground cloves
1/2 tsp salt
1 tsp vanilla
unbaked deep 9-in. pie shell
1/2 cup heavy cream
whipped (if desired)
Instructions:
Instructions: Preheat oven to 450 deg. Beat together the rutabaga, brown sugar, molasses, eggs, light cream, ginger, cinnamon, nutmeg, cloves, salt and vanilla. Pour into the pie shell and bake fifteen minutes. Reduce the oven heat to 350 deg. and bake about 40 minutes longer, or until set. Do not overbake. Cool. Serve topped with whipped cream and sliced filberts.
