Instructions: Peel the rutabaga and trim root end off. Wash in cold water. Cut into pieces.
Pan fry, or microwave a small piece of salt pork by placing it in a bowl with a bit of water, covering with a piece of waxed paper and microwaving on high for 3 to 5 minutes. Cover chopped/cut up rutabaga with cold water*. Add salt pork** and drippings. Boil over medium heat until very tender. ADD A TABLESPOON of sugar. Season lightly with salt and black pepper. Mash or chop rutabaga very fine. *Sometimes I add 1/2 of a Knorr chicken bouillon cube. ** Several strip of fried smoked bacon may be substituted, but the salt pork gives the best flavor.
