Ingredients:

2 tbl ghee
6 x black peppercorns
6 x cloves
300 gm basmati rice washed and drained
600 ml hot water
1 tsp saffron strands soaked in a little hot water
1 tsp fresh orange zest grated
salt
Instructions:
Instructions: Heat the ghee in a heavy pan and add the peppercorns and cloves.

When they pop add the rlce and fry until aromatic.

Stir in the water saffron orange zest and salt.

Bring to the boil and reduce the heat.

Simmer until the rice is fluffy and dry.

Take off the heat and gently mix with a fork taking care not to break the delicate grains of rice.

To serve arrange on a decorative planer and float the silver foil on top.

Serves 4
