Instructions: Finely dice onion.
Heat butter in pan and fry almonds until golden, remove and set aside. Add onion to pan and fry until golden. Add rice and stir 3 minutes, then add remaining ingredients except almonds and saltanas. Bring the rice to the boil, reduce heat, and simmer gently, covered, for 15 minutes or until liquid is absorbed and rice is tender. Lightly stir in saltanas and almonds and cook gently for 3 more minutes. Serve hot. Email this Recipe:
