Instructions: Bring a saucepan of lightly salted water to the boil add the rice and saffron cover and cook until the rice is tender but still quite firm.
Drain and place the rice in a bowl. Make the vinaigrette: whisk the vinegar together with the juice from the orange. Season with salt add the oils and whisk again. Then pour over the rice while it is still warm. Add the remaining ingredients and toss together to mix everything properly. Adjust the seasoning with some more salt if necessary.
