3/4 cup sago (seed tapioca)
2 cup milk
2 cup sultanas
1 cup raisins chopped
1/2 cup stale breadcrumbs
1/2 cup firmly packed brown sugar
2 tbl plain flour
2 tsp baking soda
2 x eggs lightly beaten
Instructions:
Instructions: Combine sago and milk in a small bowl, stir well, cover; refrigerate overnight.

Grease 2.25 litre (9cup) pudding steamer, line base with baking paper. Place sago mixture in small pan, stir constantly over low heat for 15 min or until sago is clear.

Combine sago mixture with remaining ingredients in large bowl. Spoon into prepared steamer, cover with baking paper then foil, secure with string or lid. Crush surplus foil around rim of lid to form a good seal.

Place steamer in large pan with enough boiling water to come halfway up side of steamer. Boil, covered with tight-fitting lid, 3 hours. Replenish boiling water as necessary. Stand 5 min before turning out. Serve hot or cold. Delicious with custard.

Raisins and sultanas can be replaced with other mixtures of dried fruit such as dried apricots and glace cherries etc.
