1 head curly endive lettuce
8 x marinated artichokes julienned
4 x tomatoes cut in wedges
1 x green bell pepper julienned
1 x red bell pepper julienned
3 x hard boiled eggs chopped
1/2 cup extra virgin olive oil
3 tbl red wine vinegar
1 tsp basil
1 tsp tarragon
1/4 tsp salt
Instructions:
Instructions: Wash, trim and cut the lettuce. Place in a salad serving bowl. Arrange the artichoke, tomatoes, peppers and eggs around the lettuce.

Blend the oil, vinegar and seasonings. Pour over the salad and serve.
