Instructions: Carve the edge of the remaining 3/4 melon to make a basket.
Scoop out the seeds and trim the sides neatly. 100g ripe mango, cubed 100g water-chestnuts, cubed 1 green apple, cubed and soaked in salt water 1 tin longan, drained well Some red marachino cherries Dressing 1/2 cup mayonnaise 1 tbsp lemon juice 1 tbsp sugar Pinch of salt Garnishing Pistachio nuts, shelled Method PREPARE the honeydew basket and chill in the refrigerator. Chill the cut fruits as well. Mix dressing ingredients in a bowl and chill well. Just before serving, toss all the ingredients with the dressing and add the pistachios.
