Ingredients:

4 x tomatoes
3 x eggs
200 gm tuna, flaked
250 gm green beans
1 tbl fresh herbs (chopped)
1/2 x cucumber
4 x anchovy fillets
8 x olives, black
----------------- DRESSING: ----------------
1/4 cup olive oil
1 tbl white wine vinegar
1/2 tsp mustard, whole grain
1 tsp garlic, crushed
pin sugar (caster)
salt, pepper
Instructions:
Instructions: Dressing:
Put all ingredients in a screw topped jar and shake well to blend before using.

Hard boil eggs, 10 minutes. Peel and slice.

Blanch beans in boiling water.

Slice tomatoes.

Peel seed and slice cucumber.

Arrange half the tomatoes in a layer in a shallow serving dish and cover with the eggs, tuna, beans and herbs. Pour over half the dressing. Cover with the cucumber slices then the remaining tomatoes.

Split the anchovies in half lengthways and arrange in a lattice pattern over the tomatoes. Place an olive half in each diamond and spoon over the remaining dressing.

Serve with crusty brown bread.
