2 cup couscous (pearl pasta
2 cup frown petite pois
2 cup bay shrimp
1 cup pea shoots or bin sprouts
ginger dressing:
2 tbl grated fresh giver
1 tsp packed brown sugar
1 clv garlic minced
1/2 x tpsn red pepper flakes
1/4 cup fresh lime juice
1 tbl sesame oil
1/2 cup peanut or canola oil
1 x salt and freshly ground pepper to taste
red lettuce leaves for serving
Instructions:
Instructions: Cook couscous in a medium pot of salted boiling water for 8 to 9 minutes. Drain and let cool.

Cook peas in salted boiling water for 4 minutes.

Drain under cold water and cool.

In a large bowl combine pasta peas shrimp and shoots or sprouts.

In a blender or food processor puree all dressing ingredients until smooth. Taste and adjust seasoning.

Toss with couscous mixture.

Line a serving plate with lettuce leaves and mound salad over them.

Sprinkle with sesame seeds.

Couscous adds new interest.to any pasta salad but if you cant find it easily try orzo or any other small pasta.
