dressing:
6 tbl fresh lemon juice
2 tsp dijon mustard
2 tbl creme fraiche or heavy cream
1/2 cup vegetable oil
1/2 x easpoons minced fresh tarragon leaves or 1/2 teaspoon dried tarragon
1 x salt and freshly ground peppy to taste
1 lb smoked trout skinned and boned
1 x cucumber peeled halved lengthwise and seeded
1/4 cup snipped fresh dill
2 cup red radishes
1 cup white radishes
3 bn watercress stemmed
Instructions:
Instructions: In a small bowl whisk together all dressing ingredients until well blended. Cut trout into strips and put in a medium bowl.

Slice cucumber very thin and add to bowl with half of dill.

Toss with half of dressing.

Slice radishes very thin and put in a bowl with watercress and 1/2 cup chives.

Toss with remaining dressing.

On large serving platter make a bed of watercress mixture.

Mound trout mixture on top.

Sprinkle with remaining dill and 2 tablespoons chives.
