1 cup pumpkin seeds
60 ml extra virgin olive oil
1/2 kg extremely ripe watermelon
300 gm salty sheeps feta
crushed black pepper
Instructions:
Instructions: Preheat the oven to 180C/350F/Gas mark 4.

Mix the pumpkin seeds with 20ml olive oil spread on a baking sheet and toast in the oven for 812 minutes until golden.

Dont burn.

Cut the watermelon into chunks and peel it.

If you have time remove the seeds.

Slice or crumble the fete over the watermelon sprinkle with the toasted seeds and crushed pepper drizzle with olive oil and serve with lemon wedges.

Serves 6
