Instructions: Wash lettuce thoroughly, dry and cut coarsely. Add shallots or onions, sugar, salt and pepper. Fry bacon until golden brown. Dice it and add to the lettuce. Into 2 Tb hot bacon fat, add the vinegar and water and bring to a boil. Pour over lettuce, mix and serve.
