Ingredients:

7 tbl cornmeal
3 tbl all-purpose flour
1/4 tsp baking soda
1 pch salt
1/2 cup buttermilk
1/2 cup cream cheese, softened
1 x egg, lightly beaten
1/2 cup corn kernels
6 tbl chives, finely chopped
12 x finely peperoncinis, chopped
4 oz smoked salmon, chopped
2 tbl butter, (2 to 3)
6 x eggs, poached
----------------- CREAMY DILL SAUCE ----------------
2 cup heavy cream
Instructions:
Instructions: In a medium-sized bowl, mix together the first four ingredients. Stir in the buttermilk, cream cheese, and egg. Gently fold in the corn, chives, peperoncinis, and salmon and form the mixture into 3-inch cakes.

In a large skillet, melt the butter and fry the cakes on medium heat until golden brown. Top each serving with 1 poached egg and cover with the Creamy Dill Sauce. Serve immediately.

YIELD: 6 SERVINGS

Creamy Dill Sauce:
In a small saucepan, combine the cream and dill. Reduce by half Serve.
