Grate the parmesan and spread evenly on the two bases. Cut the mozzarella into thin slices and arrange on the top. Also thinly slice the salmon and place on the top so it overlaps with the slices of mozzarella. Drizzle with olive oil and season well and place in a pre heated hot oven 210?C/425?F/gas mark 7 for 5 to 8 minutes until golden brown in colour.
