1 tsp sugar
4 tsp soy sauce
4 tbl rice vinegar
4 tbl Oriental sesame oil
1/2 cup vegetable oil
4 tsp sesame seeds, toasted lightly and cooled
1/4 lb salmon fillet
Freshly ground black pepper to taste
Instructions:
Instructions: In a bowl whisk together the sugar, the soy sauce, the vinegar, and salt to taste, add the oils in a stream, whisking, and whisk the vinaigrette until it is emulsified. Stir in the sesame seeds.

Place salmon in a foil-lined pan and spoon a little of the vinaigrette over the fish. Bake in a preheated 450-degree oven 12 minutes per inch of thickness, or until cooked through.

Place salad greens on 4 plates. Spoon vinaigrette over each serving of fish and greens. There may be some vinaigrette left over.

Serves 4.
