FOR THE SALAD ----------------
Kale or a curly green leaf lettuce
1/2 lb smoked salmon, thinly sliced
1 cup canned artichoke hearts, drained
2 med pink grapefruit, peel and section
----------------- FOR THE YOGURT-DILL DRESSING ----------------
1 cup fat-free yogurt
1 x clove garlic, minced
1 tsp chopped fresh dillweed
1 tbl chopped fresh parsley
Instructions:
Instructions: Arrange the kale or lettuce on individual salad plates and arrange the salmon, artichoke hearts, and grapefruit on the lettuce.

Mix together the dressing ingredients, spoon over the salad, and serve.

SERVING SUGGESTIONS: Serve with sliced dill boule (a round loaf of French bread) and chilled vodka for an after-theater supper.
