1 x red onion chopped
1 x clove garlic crushed
4 stalk celery chopped
1 x yellow bell pepper diced
1 cup brown basmati rice
1/2 cup fish stock
1/4 cup dry white wine
14 oz canned pink salmon drained and flaked
14 oz canned red kidney beans rinsed and drained
12 oz broccoli florets small pieces
3 tbl chopped fresh parsley
1 tbl light soy sauce or more to taste
salt and black pepper
Instructions:
Instructions: 1. Put the onion, garlic, celery pepper, rice, stock and wine in a saucepan and bring to a boil, stirring. Simmer uncovered for 25 - 30 minutes, until almost all the liquid has been absorbed, stirring occasionally.

2. Stir the salmon and beans into the rice mixture. Cook gently for another 5 to 10 minutes, until the pilaf is piping hot.

3. Meanwhile, cook the broccoli florets in boiling water for about 5 minutes, until tender. Drain thoroughly and keep warm.

4. Fold the broccoli into the pilaf, then stir in the parsley and soy sauce and season to taste. Garnish with flaked almonds and serve immediately.
