Ingredients:

1/2 lb salmon fillet skinned & boned
3 x gloves garlic minced
2 tbl parsley chopped
1 tbl olive oil divided
3 tbl lemon juice fresh (divided)
3 x red bell pepper sliced into strips
1/4 cup basil leaves fresh, chopped
6 x scallions diced
6 cup fettucine cooked
Instructions:
Instructions: Cut salmon into small thin slices. Marinate salmon, garlic, and parsley together with 1 teaspoon of olive oil and 2 tablesppons of lemon juice.

Toss red pepper strips with basil leaves.

Boil water for pasta. Saute red peppers and scallions in the other 2 teaspons of olive oil for 1-2 minutes until scallions are softened. Begin cooking fettuccine. Add salmon to the peppers and continue cooking another 1-2 minutes until fish is just done. Do not let salmon overcook adn become dry. Season with pepper and the other tablespoon of lemon juice. Add the cooked futtuccine and mix all together in warm serving dish. Sprinkle with Parmesan cheese.

NOTES : You can substitute 2 tsp of dried basil for the fresh basil leaves.
