Instructions: Make the mango curry sauce by combining ingredients and chill well. To prepare salmon: salt and pepper pieces. Lay 2 sheets of phyllo on flat surface and brush with melted butter. Add 2 more sheets and brush with melted butter. Place 1/4 of mango mixture in middle of phyllo several inches up from bottom edge. Place on salmon. Fold ( roll ) phyllo over salmon and tuck under edges. Repeat for 3 more servings. Place salmon pastries into a buttered baking pan and brush tops of pastry with more melted butter. Bake 400F about 25 minutes or until pastry is golden.
