Instructions: 1. Make vinaigrette: Whisk all ingredients together in small bowl; cover and set aside.
2. Combine lentils, water and salt in saucepan. Bring to boil, reduce heat and simmer until lentils are just tender, 20 to 25 minutes. Drain and keep warm. Heat oil in small saucepan over medium-high heat. Add shallots and cook 2 minutes; stir into lentils and add parsley. 3. Meanwhile, heat broiler. Line broiler pan with foil and place salmon on top. Drizzle 1 teaspoon vinaigrette over each piece. Broil 4 inches from heat source 8 to 10 minutes, until fish is opaque. 4. Spoon lentils onto plate; top with salmon. Drizzle on remaining vinaigrette.
