1 x 10 oz skinless salmon fillet - (10 to 16)
2 tbl peanut oil or clarified butter
2 tbl dijon mustard
2 tsp honey
4 tbl fine dry breadcrumbs
Instructions:
Instructions: Lightly flour fillet and sear on both sides in a saute pan with the oil or butter. Mix all other ingredients for crust and top salmon with mixture.

Place coated salmon in shallow pan or casserole and place in 350 degrees oven for 8-10 minutes. Remove from oven to warm platter.

Serve warm with honey mustard sauce on the side (same ratio as above but omit breadcrumbs).

NOTES: You may substitute boneless, skinless chicken breasts with terrific results. The chicken makes a great entree or sandwich.
