Ingredients:
Amount Ingredient
3/4 cup diced cantaloupe
3/4 cup diced watermelon
3/4 cup diced honeydew melon
3/4 cup diced cantaloupe
1/4 cup (60 ml) chopped red onion
2 tbl (30 ml) fresh lime juice
2 tbl (30 ml) chopped cilantro (coriander leaves)
1 tbl (15 ml) chopped jalapeno pepper, or to taste
Salt and freshly ground pepper to taste
Instructions:
Instructions: Combine all ingredients except the salmon in a non-reactive bowl and allow to sit at room temperature for at least 2 hours, or refrigerate overnight. Season the salmon with salt and pepper and grill over hot coals or under a preheated broiler for about 4 minutes per side. Top with salsa at room temperature and serve immediately.

Serves 4 to 6.
