FOR THE SALAD ----------------
2 lb brisket or other roast beef, cooked and shredded
6 x green onions, chopped
1 x Wedge ripe tomatoes
Sliced green pimento-stuffed olives
----------------- FOR THE DRESSING ----------------
2 tbl olive oil
3 tbl red wine vinegar
1 tbl lemon juice
1 x clove garlic, minced
1 tsp crushed arbol or pequin chile
1 tsp chopped fresh cilantro
1/2 tsp salt
Instructions:
Instructions: Place the beef and onions in a salad bowl, preferably glass. In a separate bowl, mix the dressing ingredients. Pour the dressing over the meat and onions and toss lightly. Place the meat on a bed of lettuce leaves, arrange tomato wedges around the edge of the plate, sprinkle the sliced olives on top of the meat and serve.

SERVING SUGGESTIONS: Great served with warm, soft corn or flour tortillas and very cold Mexican beer such as Tecate or Corona.
