Instructions: Saute the onion in the oil until soft and very lightly colored. Add the garlic and saute briefly, then add the tomato and cook slowly until reduced to a pulp. Season with salt and pepper and add the herbs. Simmer briefly, then pass through a sieve or puree in a food processor or blender if a smooth sauce is desired. Can be frozen.
NOTES : Variation: To make a spicy tomato sauce, add hot paprika or cayenne to taste. Also add extra garlic as desired. Email this Recipe:
