Ingredients:

2 x Red onions, finely chopped
2 x Green peppers, seeded and diced
2 x Green chillies, seeded and finely diced
1 cl Garlic, finely chopped
1 tbl Olive oil
8 x Plum or salad tomatoes, skinned, seeded and diced
1 x Limes, juice of, up to 2
Instructions:
Instructions: Mix together the onions, green peppers, chiles, and garlic. Add the oil and juice of 1 lime. Add the tomatoes and stir well to slightly break down the tomato flesh. Adjust the seasoning with a good pinch of salt. The salsa should have a good balance of flavours. More lime juice may be needed to lift the other tastes. The salsa can be kept in the fridge for a few days.
