1 box Sure Jell light fruit pectin
1/2 cup sugar divided
2 cup fully ripe plum tomatoes finely chopped
1/2 cup onions finely chopped
1/4 cup cilantro minced
1/4 cup pickled jalapeno peppers finely chopped
1 tsp lime peel grated
2 tbl fresh lime juice

Mix pectin and 1/4 cp sugar in a small bowl. Mix tomatoes, onions, cliantro, peppers, lime peel and juice and pepper sauce in a large bowl.

Add pectin mixture to vegetable mixture, stirring well. Let stand 10 min, stirring occasionally. Stir remaining sugar into mixture until it is dissolved and no longer grainy, about 3 minutes. Pour into clean plastic containers and cover. Let stand at room temp for 24 hours. Jam is now ready to use. Store in fridge or freeze extra containers.

Makes about 4
cups.
