4 x corn tortillas
1/2 tbl vegetable oil
3 tbl flour
1/2 tsp chili powder
1/8 tsp salt
1 med tomato chopped
2 tbl minced seeded jalapeno
4 x green onions trimmed, sliced
1/3 cup Ortega salsa - thick & chunky (medium)
3 x eggs beaten
1/2 cup 2% milk
Instructions:
Instructions: Preheat oven to 350 degrees.

Warm the tortillas in a dry skillet until soft, then coat an 8- by 8- by 2-inch baking dish with the oil and arrange the tortillas to cover the bottom and sides.

In a bowl, combine flour, chili powder and salt. Sprinkle the tortillas with a little of the flour mixture. Top with tomato, pepper and onion. Sprinkle again with the flour mixture. Spoon salsa over the top. Combine the eggs and milk well and pour over the vegetables.

Bake, uncovered, about 20 to 25 minutes or until a toothpick inserted comes out clean. Top with cheese and bake until cheese melts. Serve hot.
