Instructions: Wash potatoes. Do not peel but cut into 1 inch cubes. Place in saucepan and add cold water to cover. Cover pan. Bring water to a boil and simmer 15 minutes, or until potatoes are tender but not mushy. Meanwhile, mix mayonnaise, yogurt and salsa together a serving bowl. Add salt and pepper to taste.
Drain potatoes and add to serving bowl. Toss well to coat potatoes with the sauce. Add salt and pepper to taste. Email this Recipe:
