1/2 cup salsa of your choice fire-roasted salsa works best
1 x clove minced
1 tbl fresh lime juice
1 tsp freshly ground black pepper
1/2 tsp salt
1/2 lb flank steak trimmed of excess fat
1 x red bell pepper cut into 1/4-inch strips
1 x yellow bell pepper cut into 1/4-inch strips
1 x green bell pepper cut into 1/4-inch strips
1 lrg onion thinly sliced
Instructions:
Instructions: To cook meat and vegetables:In small mixing bowl, combine salsa, garlic, lime juice, salt and pepper. Place flank steak in 4-quart slow cooker. Pour sauce over steak, making sure to coat meat well. Add bell peppers and onion. Cover. Cook on low heat setting 6 to 8 hours or on high heat setting 3 to 4 hours.

To serve: Remove steak and vegetables from juice. Let steak stand for 10 minutes before slicing. Slice steak thinly across grain. Serve with peppers and onion. Garnish with fresh cilantro. Pass store-bought tortillas, rice and beans.
