200 gm salt fish (flesh only)

20 gm coriander (ketumbar)
5 gm fenugreek (halba)
5 gm fennel (jintan manis)
5 gm cummin (jintan putih)
10 x dried chillies (remove seeds and soak in water)
2 x inches fresh turmeric
10 x shallots
3 x pips garlic
3 x cloves
3 x star anise
3 tbl vinegar
120 gm sugar
2 stalk curry leaves

Cut salt fish into desired sizes, wash and drain. Fry in hot oil until lightly brown. Remove and set aside.

Heat pan with 4 tbsp oil. Add shallots and garlic. Stir-fry till fragrant, then add all ground ingredients and spices.

Add salt fish, vinegar, curry leaves, salt and sugar to taste. Reduce heat and simmer for another half hour. Cool and store in air-tight jar.
