Instructions: Heat a heavy pan and dry roast all the whole spices.
Keep the heat low and stir constantly to stop them burning. The seeds will crackle and fly out so beware. Add the turmeric and asafoetida give the mixture a good stir and take off the heat. Transfer it to a dry bowl and in the same pan heat the oil and fry the three lentils. When they turn dark add to the roasted spices. Cool the mixture and grind in an electric blender until fine.
