Instructions: Season ribs lightly. Hand rub each rack, refrigerate for 3 hours prior to cooking.

Pre-fire cooker to 225 degrees - 250 degrees. Use seasoned oak, or your preference of wood. (Mesquite wood is OK but it burns very hot!) Place the ribs on the cooker as far from the fire as possible. Maintain 225 - 250 degrees heat. Cooking time will vary according to the outside temperature and humidity. (Hot/Dry - 3 - 4 hours, Cool/Damp - 4 - 6 hours).

To check for proper doneness, pick the entire rack up, bend it like a saw blade. If the ribs break, takeem off. If they bend like a saw blade, cookem longer. Repeat this process and you cant go wrong. Remember, keepem away from the flame, and cook slowly.
