1/4 cup dry sherry or apple juice
1 tbl olive oil
2 cup chopped onions
1/2 cup chopped celery
1/2 cup chopped carrot
1/2 cup chopped red bell pepper
4 cup cooked black beans
2 cup fresh or canned or frozen corn kernels
2 cup vegetable stock or water
2 tbl minced garlic
1 cup chopped tomatoes
2 tsp ground cumin
4 tsp chili powder, or to taste
1/2 tsp dried oregano
1/4 cup chopped fresh cilantro
2 tbl honey

Mark Twain once said that the coldest winter he ever spent was a July in San Francisco. This combination of corn and black beans can take the chill off of any fog-shrouded day.

In a large soup pot over medium-high heat, combine sherry and oil. When hot, add onions. Saute, stirring, until soft but not brown. Add celery, carrot and bell pepper; saute 5 minutes. Add remaining ingredients; bring to a boil, lower heat; simmer 15 minutes. Before serving, puree 1 cup stew in blender: add back to pot.

Makes 8 servings.

Variation: Serve with crushed corn chips if desired.
