1 x 9-oz. pkg. refrigerated cheese-filled tortellini
3 tbl olive or vegetable oil
2 cup broccoli flowerets
1 med onion (1/2 cup) chopped
1 med red bell pepper (1 cup) chopped
3 tbl all purpose flour
3/4 cup milk
3/4 cup chicken broth used 1 can Campbells Chicken Broth
1 tsp ground cumin didnt use
4 cup cut up cooked chicken
3/4 cup shredded Monterey Jack cheese
1/2 cup shredded Colby cheese
Instructions:
Instructions: Heat oven to 325 F. Grease 3-quart casserole. Cook and drain tortellini as directed on package.

Heat 1 tbsp of the oil in 10-inch skillet over medium-high heat. Cook broccoli, onion and bell pepper in oil about 3 minutes, stirring frequently, until crisp-tender. Remove broccoli mixture from skillet.

Cook flour and remaining 2 tbsp oil in same skillet over low heat, stirring constantly, until smooth. Stir in milk, broth and cumin. Heat to boiling over medium heat, stirring constantly; remove from heat. Stir in chicken, Monterey jack cheese, tortellini and broccoli mixture. Spoon into casserole.

Bake uncovered 25 to 35 minutes or until hot in centre. During last several minutes of baking, sprinkle with Colby cheese and tortilla chips; bake until cheese is melted.
