4 x Serrano red chilies, seeded and sliced
4 tbl Cilantro roots
3/4 tsp Paprika
3 x Garlic cloves, peeled and minced
2 tbl Brown sugar
2 tbl Fish sauce
3 tbl Lemon juice
2 tbl Indonesian soy sauce, (optional)
3 tbl Corn oil

In food processor, blend chilies, cilantro, paprika, garlic, brown sugar, fish sauce, lemon juice and Indonesian soy sauce. Process until mixture forms a paste. Transfer to a bowl and stir in oil. Let shrimp marinate in paste 15 minutes.

Grill or sear the shrimp for 2 minutes on each side or until they turn pink. Place each shrimp on a 6-inch skewer and serve.
