1 tbl Olive oil
2 tbl Onions chopped
2 tbl Green onions chopped
2 tbl Celery chopped
2 tbl Green bell peppers chopped
1 tbl Shallots minced
1 tbl Jalapeno peppers seeded, -minced
1 tbl Garlic minced
1 tbl Fresh basil chopped
1 tsp Fresh thyme chopped
1 tsp Fresh oregano chopped
2 x Bay leaves
1 cup Italian plum tomatoes peeled, seeded and
chopped
1 cup Chicken stock
1/2 tsp Salt
1/2 tsp Cayenne pepper
2 x Turns fresh black pepper
Instructions:
Instructions: In a sauce pot, heat oil. Add the onions, green onions, celery, bell pepper, jalapenos, shallots and garlic over high heat. Add the basil, thyme , oregano, and bay leaves. Saute for 2 minutes. Stir in tomatoes, stock, salt, cayenne and black pepper and bring to a boil. Cook over high heat for 2 minutes. Reduce the heat and simmer, stirring occasionally, for about 5 minutes. Stir in butter and remove from heat.

Makes 2 cups.
