Ingredients:

10 x eggs
16 oz cottage cheese, lowfat
1 lb Monterey jack cheese grated
8 oz green chiles -- diced
1/2 cup flour
1 tsp baking powder
1/2 tsp salt
1/2 cup butter -- melted
3/4 lb pork sausage -- ground
1/2 lb mushrooms -- sliced
Instructions:
Instructions: The night before:
Brown and drain sausage. Saute onions and mushrooms in 1 TBS butter.

Beat eggs until lemon colored. Mix in cheeses. Add chiles, sausage, mushrooms and onions. Stir, cover and refrigerate overnight.

The next morning:
Stir in sifted flour, salt, baking powder, and the rest of the melted butter.

Spray 9 x 13 glass pan with cooking spray. Fill with egg mixture.

Bake at 350 for 40 to 45 minutes or until browned. Let stand for 10 minutes.
