1/2 lb bulk pork sausage
1/4 lb mushrooms sliced
2 cup Stove Top Stuffing Mix for chicken
1/4 cup grated carrot
1 cup hot water
2 x cornish game hens - (1 to 1 1/2 lbs ea)
Instructions:
Instructions: Brown sausage with mushrooms in skillet; drain. Mix in stuffing mix, carrot and hot water. Rinse hens with cold water; pat dry.

Spoon stuffing into cavities. Close openings with skewers. Place birds, breast-side up, in shallow roasting pan. Brush with oil.

Roast in oven at 350 degrees for 1 hour. Spoon jelly over hens. Bake an additional 10 minutes. Place any remaining stuffing in baking dish; cover. Bake with hens during last 20 minutes of baking time.

This recipe yields 2 servings.

Great Substitute: Substitute 1 roasting chicken (4 to 5 pounds) for Cornish hens; roast 1 1/2 hours before topping with jelly. Continue as directed.
