1 lb sweet Italian sausage meat
1 tsp basil
1 cup onion, finely minced
1 tsp sage
2 tsp garlic, finely minced
1 tsp tarragon
3 tbl butter
1 tsp oregano
3 tbl olive oil
1 pt heavy cream
1 tsp thyme
Instructions:
Instructions: Heat a very large skillet, melt butter and oil and sauteeonion and garlic until translucent. Add sausage meat and spices to the onion mixture and cook on moderate heat for 10 to 15 minutes, or until the sausage is completely cooked. Add the cream and reduce by one-third.

This should take about 5 minutes on moderate heat. Stir very frequently to insure it doesnt stick or burn. Taste, adjust seasoning with salt and pepper and whatever else you want to add. Pour over hot pasta and MANGIA
