Instructions: If you are using a whole chicken cut it into pieces legs,thighs, breasts.
Heat oil in a fry pan and brown the chicken pieces evenly, a few at a time. Transfer to an ovenproof casserole dish. When all the chicken is browned, add some water to the frypan and scrape up any sediments. Add to casserole dish. Prepare the sauce: Dice onion and bacon. slice mushrooms. Melt the butter in pan and add the onion, bacon and garlic. Cook gently for 2 minutes, stirring often, then add mushrooms, wine, brandy and cook for about 5 minutes, stirring regularly. Add remaining ingredients for the sauce and bring to the boil. Pour sauce over the chicken, cover, and cook in a moderate oven 360F/190C for 1 hour. Stir occasionally. Thicken sauce slightly with cornflour if necessary towards end of cooking time. Sprinkle over chopped parsley and serve with buttered noodles, rice or creamed potato puree. Email this Recipe:
