2 cup diced fresh tomatoes - (abt 2 large ones)
2 tbl chopped fresh basil
2 tbl chopped fresh Italian parsley
2 x garlic cloves minced
2 tbl olive oil
1 tbl butter
4 x fish fillets - (abt 1 1/2 lbs total)
(such as salmon, halibut, or sea bass)
Salt to taste
Freshly-ground black pepper to taste
Instructions:
Instructions: In a medium bowl, combine tomatoes, basil, parsley, garlic, and olive oil; set aside. (For a smoother sauce, puree the mixture in a food processor or blender.)

In a large skillet, melt butter over medium heat. Sprinkle fish fillets with salt and black pepper to taste and add to the skillet. Squeeze lemon juice over the fish and cook 5 minutes on each side, or until fish is opaque.

Serve the fish drizzled with the tomato-herb sauce.

This recipe yields 4 servings.
