2 tbl olive oil
3 x leeks, thinly sliced
1 x clove garlic, minced
2 cup sliced peeled jicama, sliced 1" long 1/4
1 x inch thick
2 x New Mexico green chiles, roast, peel,
seeded, & chopped
Instructions:
Instructions: Heat the oil in a frying pan, stir in the leeks and garlic and saute over medium heat for 3 to 4 minutes, stirring occasionally Add the jicama, chile, and cilantro and cook for another 3 to 4 minutes. Serve at once.

SERVING SUGGESTIONS: This is a perfect side dish with broiled fish.
