625 gm lambs or calves kidneys
2 tbl vinegar
2 tbl oil
25 gm butter
2 x clovesgarlic finely chopped
2 tbl chopped parsley
1 tbl lemon juice
1 x salt and pepper
Instructions:
Instructions: Cover the kidneys with cold water add the vinegar and leave to stand for at least 30 minutes.

Drain cut out the core and thinly slice the kidneys.

Heat the oil and butter in a large frying pan.

Add the garlic and kidneys and fry briskly stirring constantly for 2 minutes.

Add the parsley lemon juice and salt and pepper to taste.

Cook stirring for 1 to 2 minutes until the kidneys are tender but juicy.

Serve immediately garnished with fried bread triangles.

Serves 4
